A wonderful year to you as well, Val. Thanks for your comment. Regarding the peas, you can use fresh (soaked overnight first), frozen, or canned. If you use the canned, be sure to rinse and drain first, and use salt sparingly as these have already been salted.
I used a bit of bayleaf and very light olive oil and simply added enough liquid to cook without burning. Another variation is to add some chopped tomatoes and coriander. You can use any spice that appeals, really.

I enjoyed your Christmas in the sun pictures, above all the lion. We have a new calendar for 2011 – photographs of wild cats – the lynx is beautiful but really the lion is truly the king.
